Welsh Tea Bread Recipe

Ingredients

  • 1 pkg. yeast
  • 1/4 c. hot water
  • 2 c. scalded lowfat milk, cooled
  • 1 c. brown sugar
  • 2 Large eggs
  • 1/4 c. melted butter
  • 1 1/2 teaspoon cinnamon
  • 3/4 teaspoon allspice
  • 1 1/2 c. raisins
  • 6 to 6 1/2 c. flour, divided

Instructions

  1. Dissolve yeast in the water.
  2. Put scalded lowfat milk in large bowl.
  3. Add in yeast, sugar, egg, butter and spices; mix well after each addition.
  4. Mix raisins with 1 c. of flour and add in to egg mix.
  5. Gradually add in 5 more c. of flour.
  6. Place on floured board and knead till smooth, about 10 min.
  7. Place in oiled bowl, cover and let rise till doubled.
  8. Punch down and let rise again, about 20 min.
  9. Punch down and form into 2 loaves.
  10. Place into two greased bread pans, cover and let rise again.
  11. Bake at 325 degrees for 45 min.
  12. Remove from pans and glaze while loaves are warm.
