Ingredients

  • 4 bacon strips, diced
  • 1 large onion, chopped
  • 1/3 cup dry lentils
  • 1 1/3 cups water
  • 2 tablespoons ketchup
  • 1 teaspoon garlic powder
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried red pepper flakes
  • 1 bay leaf
  • 1 (16 oz.) can whole tomatoes with liquid, chopped
  • 1 (15 oz.) can pinto beans, drained
  • 1 (16 oz.) can kidney beans, drained

Instructions

  1. Lightly fry bacon in a heavy, 3-quart saucepan.
  2. Add onion; cook until transparent.
  3. Stir in remaining ingredients; cook over medium heat for 45 minutes, or until lentils are tender, stirring once or twice.
  4. Remove bay leaf before serving.
