Ingredients
- 4 bacon strips, diced ⓘ
- 1 large onion, chopped
- 1/3 cup dry lentils ⓘ
- 1 1/3 cups water ⓘ
- 2 tablespoons ketchup ⓘ
- 1 teaspoon garlic powder ⓘ
- 3/4 teaspoon chili powder ⓘ
- 1/2 teaspoon ground cumin ⓘ
- 1/4 teaspoon dried red pepper flakes ⓘ
- 1 bay leaf ⓘ
- 1 (16 oz.) can whole tomatoes with liquid, chopped ⓘ
- 1 (15 oz.) can pinto beans, drained ⓘ
- 1 (16 oz.) can kidney beans, drained ⓘ
Instructions
- Lightly fry bacon in a heavy, 3-quart saucepan.
- Add onion; cook until transparent.
- Stir in remaining ingredients; cook over medium heat for 45 minutes, or until lentils are tender, stirring once or twice.
- Remove bay leaf before serving.
