Ingredients

  • 1/2 cup quick cooking cracked wheat (bulgur)
  • 1 cup cold water
  • 1/2 teaspoon salt
  • 1 package active dry or compressed yeast
  • 1/4 cup warm water
  • 1 3/4 cups milk
  • 1/2 cup sugar
  • 1/4 cup salad oil
  • 2 tablespoons salt
  • 1 egg

Instructions

  1. Soak the cracked wheat in 1 cup cold water and 1/2 teaspoon salt for several hours or overnight.
  2. In a large bowl, dissolve the yeast in the warm water.
  3. Stir in the scalded and cooled milk, sugar, salad oil, 2 teaspoons salt, and beaten egg.
  4. Add the soaked wheat mixture to the yeast mixture.
  5. Mix in flour to make a stiff dough.
  6. Turn out onto a floured board and knead until the dough is smooth and elastic.
  7. Place in a greased bowl and let rise in a warm place until almost doubled.
  8. Punch down the dough, then roll out on a lightly floured board.
  9. Cut into any desired roll shapes and arrange on a greased baking sheet.
  10. Let rise until almost doubled.
  11. Brush tops with melted butter or salad oil.
  12. Bake at 375°F (190°C) for about 15 minutes.
