- Soak the cracked wheat in 1 cup cold water and 1/2 teaspoon salt for several hours or overnight.
- In a large bowl, dissolve the yeast in the warm water.
- Stir in the scalded and cooled milk, sugar, salad oil, 2 teaspoons salt, and beaten egg.
- Add the soaked wheat mixture to the yeast mixture.
- Mix in flour to make a stiff dough.
- Turn out onto a floured board and knead until the dough is smooth and elastic.
- Place in a greased bowl and let rise in a warm place until almost doubled.
- Punch down the dough, then roll out on a lightly floured board.
- Cut into any desired roll shapes and arrange on a greased baking sheet.
- Let rise until almost doubled.
- Brush tops with melted butter or salad oil.
- Bake at 375°F (190°C) for about 15 minutes.
