Ingredients

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1/4 cup wheat germ
  • 1/4 cup packed brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup water

Instructions

  1. In a medium mixing bowl, mix the whole wheat flour, all-purpose flour, wheat germ, brown sugar, salt, and baking soda well.
  2. Stir in water and butter until a smooth dough forms.
  3. Divide the dough in half; cover and let stand for at least 10 minutes.
  4. Place half of the dough on a lightly oiled 17 x 14-inch baking sheet; flatten into a 4-inch square.
  5. Roll out the dough on the baking sheet to a 1/2 x 13 1/2-inch rectangle.
  6. Cut into 1 1/2-inch squares.
  7. Prick all over with a fork; brush with water.
  8. Sprinkle with coarse salt or table salt to taste.
  9. Bake in the middle of a preheated 400°F oven for 7 to 8 minutes or until crisp but not overbrowned.
  10. Remove to racks to cool.
  11. Repeat with remaining dough.
