Wheat Squares
Crispy homemade wheat squares with a nutty flavor, perfect for a healthy snack or accompaniment. Easy to prepare and customizable with a sprinkle of salt.

- In a medium mixing bowl, mix the whole wheat flour, all-purpose flour, wheat germ, brown sugar, salt, and baking soda well.
- Stir in water and butter until a smooth dough forms.
- Divide the dough in half; cover and let stand for at least 10 minutes.
- Place half of the dough on a lightly oiled 17 x 14-inch baking sheet; flatten into a 4-inch square.
- Roll out the dough on the baking sheet to a 1/2 x 13 1/2-inch rectangle.
- Cut into 1 1/2-inch squares.
- Prick all over with a fork; brush with water.
- Sprinkle with coarse salt or table salt to taste.
- Bake in the middle of a preheated 400°F oven for 7 to 8 minutes or until crisp but not overbrowned.
- Remove to racks to cool.
- Repeat with remaining dough.
