Ingredients

  • 1 lb. white beans
  • 6 cups chicken broth
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 cans chopped green chillies
  • 2 tsp. ground cumin
  • 1 1/2 tsp. oregano
  • 1/4 tsp. cayenne pepper
  • 4 cups diced cooked chicken breast

Instructions

  1. Combine beans, chicken broth, minced garlic, and chopped onion in a large pot.
  2. Cook until the beans are tender, adding more liquid if necessary.
  3. Add chopped green chillies and spices (ground cumin, oregano, cayenne pepper) to the bean mixture.
  4. Stir in diced cooked chicken breast and simmer for at least 1 hour.
  5. Serve topped with grated cheese.
  6. Offer garnishes such as sour cream, ripe olives, chopped tomatoes, tortilla chips, salsa, and guacamole.
  7. Serve with a wedge of crusty cornbread.
