Ingredients

  • 1/2 cup butter or margarine
  • 2 (6 oz.) packages white chocolate baking bars, chopped
  • 2 eggs
  • 1/2 cup sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon almond extract
  • 3/4 cup raspberry spreadable fruit
  • 1/2 cup sliced almonds, toasted

Instructions

  1. Grease and flour a 9-inch baking pan.
  2. Preheat oven to 325°F (163°C).
  3. Melt butter in a saucepan over low heat.
  4. Remove from heat and add 1 cup chopped white chocolate; do not stir.
  5. Set aside and let it stand.
  6. In a mixing bowl, beat eggs and sugar until well combined.
  7. Add all-purpose flour, salt, and almond extract; mix until smooth.
  8. Pour the melted white chocolate mixture into the batter and stir until combined.
  9. Spread the batter evenly into the prepared baking pan.
  10. Drop spoonfuls of raspberry spreadable fruit over the batter and swirl gently.
  11. Sprinkle toasted sliced almonds on top.
  12. Bake for approximately 25-30 minutes or until edges are golden and a toothpick inserted in the center comes out clean.
  13. Allow to cool before cutting into bars.
