White Wine Chicken

Juicy chicken breasts are enhanced with a fragrant white wine and mushroom sauce, perfect for an elegant dinner that pairs well with vegetables or rice.

Ingredients

  • 2 whole chicken breasts
  • salt
  • nutmeg
  • 2 Tbsp onions, minced
  • 1/4 lb mushrooms
  • 2/3 c white wine

Instructions

  1. Bone, skin, and halve the two chicken breasts.
  2. Sprinkle salt and nutmeg on both sides of the chicken.
  3. Brown the chicken in a skillet with two tablespoons of butter.
  4. Add two tablespoons of minced onion, mushrooms, and white wine to the skillet.
  5. Bring to a boil, cover, reduce heat, and simmer for 15 minutes.
  6. Remove chicken to a warm serving platter.
  7. Bring pan juices to a boil and cook, stirring, until the liquid is slightly reduced.
  8. Mix one teaspoon of cornstarch with two teaspoons of white wine.
  9. Stir the mixture into the pan juices and cook until thickened.
  10. Spoon the sauce over the chicken breasts when serving.
