Ingredients

  • 2 packets yeast
  • 1/2 cup warm water
  • 1/2 cup honey
  • 1/4 cup shortening
  • 1 tablespoon salt
  • 1 3/4 cups warm water
  • 3 cups whole wheat flour
  • 3 to 4 cups unbleached flour

Instructions

  1. Dissolve the yeast in 1/2 cup of warm water.
  2. Add the remaining ingredients: honey, shortening, salt, 1 3/4 cups warm water, whole wheat flour, and unbleached flour.
  3. Mix well, then add the whole wheat flour and unbleached flour gradually.
  4. Knead the dough until smooth and elastic.
  5. Let the dough rise for 1 hour or until doubled in size.
  6. Punch down the dough and knead briefly.
  7. Shape into two loaves and place in greased pans.
  8. Let the loaves rise until nearly doubled, about 30 minutes.
  9. Bake at 350°F (175°C) until the bread sounds hollow when tapped, about 35 minutes.
