Ingredients

  • 1 cup unbleached white flour
  • 1 cup whole wheat pastry flour
  • 1 1/2 tablespoons fructose
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups milk
  • 3 eggs
  • 1/2 cup canola oil

Instructions

  1. Stir together the dry ingredients with a whisk or fork.
  2. Separate the eggs; blend the yolks well with milk and canola oil.
  3. Lightly blend the dry ingredients with the liquid ingredients until there are no lumps.
  4. Beat egg whites until they peak and fold them into the batter.
  5. Bake in a greased waffle iron until golden brown.
