Ingredients

  • 2 (6 oz.) packages long grain wild rice
  • 1 cup celery
  • 3/4 cup cooked cubed chicken
  • 1/2 cup chopped pecans
  • 1 (4 1/2 oz.) can chopped ripe olives, drained
  • 1/2 cup chopped green onions, tops and all
  • 1 1/2 cups mayonnaise
  • salt and pepper to taste

Instructions

  1. Cook the rice according to package directions.
  2. Combine cooked chicken, chopped olives, chopped green onions, chopped pecans, chopped celery, and mayonnaise in a large bowl.
  3. Add the rice to the mixture and stir well.
  4. Season with salt and pepper to taste.
  5. Refrigerate the salad overnight.
  6. Take out 30 minutes before serving, stir, and serve.
