Wild Onion Clam Chowder

Ingredients

  • 1 cup scallion, chopped
  • 1 cup onion, chopped
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1 quart milk
  • 2 (8 ounce) cans minced clams (and juice)
  • 1 potato, diced
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. In a large pot, saute' scallions and onions in butter; about 5 minutes.
  2. Add diced potato, then the flour; blend well.
  3. Add milk.
  4. Heat to almost boiling; stirring constantly.
  5. Add clams with juice, salt, pepper, and celery salt.
  6. Continue to cook another 10 minutes.
