Ingredients

  • 1 pkg. yellow pudding cake mix
  • ingredients to prepare cake as directed on package
  • 1 large can (20 oz.) crushed pineapple, drained
  • liquid from pineapple can
  • 1 (8 oz.) container Cool Whip
  • 1 cup sugar
  • 1 pkg. instant banana pudding mix

Instructions

  1. Prepare the yellow pudding cake mix according to package instructions and bake in a 9 x 13-inch pan.
  2. Let the cake cool completely in the pan.
  3. In a saucepan, combine the pineapple juice and sugar; bring to a boil and cook for 5 minutes.
  4. Prepare the instant banana pudding mix as directed on the package and refrigerate until ready to use.
  5. Punch holes in the cooled cake and pour the hot pineapple juice mixture over the top.
  6. Spread the drained crushed pineapple evenly over the cake.
  7. Spread the prepared banana pudding over the pineapple layer.
  8. Arrange sliced bananas over the pudding layer.
  9. Spread Cool Whip evenly over the bananas.
  10. Sprinkle shredded coconut on top and garnish with nuts if desired.
  11. Keep refrigerated until ready to serve.
