Ingredients

  • 4 1/2 cups carrots, sliced
  • 1/2 cup mayonnaise or salad dressing
  • 2 tablespoons chopped onion
  • 2 tablespoons prepared horseradish
  • 1/4 cup crushed saltine crackers
  • 2 teaspoons butter or margarine, melted
  • 1/2 teaspoon salt
  • dash of pepper

Instructions

  1. In a saucepan, cook carrots, covered, in boiling salted water for 10 minutes until tender; drain.
  2. Place the cooked carrots in a 1-quart casserole dish.
  3. Combine mayonnaise, chopped onion, prepared horseradish, salt, and pepper in a bowl.
  4. Spoon the mayonnaise mixture over the carrots.
  5. Mix crushed saltine crackers with melted butter and sprinkle atop the casserole.
  6. Bake uncovered in a 350°F oven for 30 minutes until hot and golden.
