Ingredients

  • 1 c. margarine
  • 1 c. sugar
  • 1 c. brown sugar
  • 2 eggs
  • 2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. vanilla
  • 3 c. quick-cooking oatmeal
  • 1 c. shredded coconut
  • 1/2 c. raisins

Instructions

  1. Cream margarine and sugars together.
  2. Stir in beaten eggs.
  3. Sift together flour, baking powder, baking soda, and salt.
  4. Add dry ingredients to the sugar mixture.
  5. Blend in vanilla, quick-cooking oatmeal, shredded coconut, and one or more of the other additives such as raisins, chocolate bits, chopped nuts, or chopped dates.
  6. Mix thoroughly until well combined.
  7. Drop teaspoonfuls of dough onto a cookie sheet.
  8. Bake at 375°F (190°C) for 10 minutes.
