Ingredients

  • 6 medium acorn squash
  • 3 (14 oz.) cans chicken broth
  • 3/4 tsp. ground ginger
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. ground cinnamon
  • 1 1/2 cups half and half or light cream
  • 3/4 cup dairy sour cream (optional)
  • 12 small fresh thyme sprigs (optional)

Instructions

  1. Halve the acorn squash and remove the seeds.
  2. Place the squash halves, cut side down, on a baking dish.
  3. Bake in a 350°F oven for 30 minutes.
  4. Turn the squash halves cut side up.
  5. Bake, covered, for an additional 20 to 25 minutes or until the squash is tender.
