Woodsman Beef Stew
Ingredients
- 1/2 c. flour ⓘ
- 1/2 tsp. salt ⓘ
- 1/4 tsp. pepper ⓘ
- 3 lb. beef, cut into 1-inch cubes
- 1/4 c. oil ⓘ
- 3 c. water ⓘ
- 1/2 c. dry red wine ⓘ
- 2 beef bouillon cubes ⓘ
- 3 medium potatoes, cut into 2 x 2 1/2-inch pieces ⓘ
- 3 medium carrots, cut into 2 x 2 1/2-inch pieces ⓘ
- 3 stalks celery, cut into 2 x 2 1/2-inch pieces ⓘ
- 1 large onion, sliced ⓘ
- 1 to 2 Tbsp. chopped fresh dill ⓘ
Instructions
- Combine flour, salt and pepper.
- Coat meat.
- Brown in oil in large Dutch oven.
- Drain.
- Add any remaining flour mixture, water, wine and bouillon cubes.
- Bring to boil.
- Cover and simmer 1 hour and 30 minutes.
- Add potatoes, carrots, celery and onion.
- Bring to boil.
- Cover and continue simmering 1 hour or until meat and vegetables are tender.
- Stir in dill and parsley.
- Makes 8 servings.
