Ingredients

  • 1 pkg lemon Jell-O (4 serving size)
  • 1 c boiling water
  • 3 lemons
  • 8 oz cream cheese
  • 1 c sugar
  • 1 large can evaporated milk
  • Graham cracker crust

Instructions

  1. Mix the lemon Jell-O with boiling water and the juice of one lemon. Let cool.
  2. In a separate bowl, beat the cream cheese, sugar, and juice of one lemon until smooth.
  3. Whip the chilled evaporated milk and juice of one lemon until frothy like meringue.
  4. Combine the Jell-O mixture, cream cheese mixture, and whipped evaporated milk mixture.
  5. Pour the combined mixture into a large dish lined with graham cracker crumbs.
  6. Sprinkle additional graham cracker crumbs on top.
  7. Refrigerate until set and serve chilled.
