- Heat oil in a large saucepan on medium heat. Add mushrooms and onion. Saute about 5 minutes.
- Remove from heat. Stir in turkey, potatoes, parsley, salt, and pepper.
- Stir in evaporated milk. Reduce heat to low.
- Heat the mixture thoroughly, about 5 minutes.
