Ingredients

  • 2 cups flour
  • 2 cups yellow cornmeal
  • 2 1/2 tablespoons baking powder
  • 2 teaspoons salt
  • 1/3 cup salad oil
  • 4 eggs
  • 3/4 cup milk
  • 2 2/3 cups mashed, cooked or canned yams

Instructions

  1. Mix flour, corn meal, baking powder, and salt in a bowl.
  2. Combine eggs, milk, and oil in a large bowl and beat until smooth.
  3. Add yams to the egg mixture and beat until well blended.
  4. Add the dry ingredients to the wet mixture, stirring only until moistened.
  5. Pour the batter into a greased 9 x 13-inch baking pan.
  6. Bake at 425°F (220°C) for 35 to 40 minutes until golden brown.
  7. Serve warm with butter.
