Ingredients

  • 3 1/2 lb. sweet potatoes, peeled and sliced
  • 6 oz. brown sugar
  • 1 1/2 tsp. nutmeg
  • 6 oz. pineapple juice or water
  • 2 oz. butter or margarine
  • 5 oz. crushed pineapple
  • 5 oz. crushed pecans

Instructions

  1. Arrange raw sliced yams in a casserole dish.
  2. Sprinkle brown sugar and nutmeg over the yams.
  3. Pour pineapple juice or water evenly across the dish.
  4. Bake uncovered at 350°F for 1 to 1¼ hours, until yams are tender.
  5. Stir in crushed pineapple and crushed pecans.
  6. Return the casserole to the oven and bake for an additional 15 minutes, or until the top is lightly browned.
