Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 1 cup milk
  • 3 cups self-rising flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 lemon rind, grated

Instructions

  1. Cream the butter and sugar together until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. Alternately add flour and milk, beginning and ending with flour, beating well after each addition.
  4. Pour batter evenly into three greased layer pans.
  5. Bake at 350°F (175°C) for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow cakes to cool, then frost as desired.
