Ingredients

  • 6 slices bacon
  • 1/2 cup chopped onion
  • 2 medium peeled and chopped tomatoes
  • 4 cups fresh cut corn
  • 1 cup chopped green pepper
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Cook bacon until crispy; drain and crumble.
  2. Reserve 2 tablespoons bacon drippings in skillet.
  3. Add corn, green pepper, and onion to the skillet.
  4. Cook over high heat for 5 minutes, stirring often.
  5. Stir in bacon, tomatoes, salt, and pepper.
  6. Spoon mixture into a highly greased 2-quart shallow baking pan.
  7. Bake at 350°F for 15 minutes.
