- Mix all dry ingredients in a bowl.
- Beat the buttermilk and egg together and stir into the cornmeal mixture.
- Heat bacon drippings in an iron skillet and pour into the batter.

- Invert the skillet onto a cover, slide back into the skillet, and cook for another 10 minutes, until the center is done.
- Serve in wedges hot.
