Ingredients

  • 1 c. yellow cornmeal
  • 1 1/2 tsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 2 tsp. bacon drippings
  • 1/2 c. buttermilk
  • 4 slices crumbled bacon
  • 1 egg

Instructions

  1. Mix all dry ingredients in a bowl.
  2. Beat the buttermilk and egg together and stir into the cornmeal mixture.
  3. Heat bacon drippings in an iron skillet and pour into the batter.
  4. Cover and cook over low heat for 10 minutes.
  5. Invert the skillet onto a cover, slide back into the skillet, and cook for another 10 minutes, until the center is done.
  6. Serve in wedges hot.
