Tips & Substitutions

For a lighter cake, consider using cake flour instead of all-purpose flour. If you prefer a dairy-free version, substitute the milk with almond or oat milk. To enhance the flavor, add a teaspoon of lemon zest to the batter. Ensure your butter is at room temperature for easy creaming, which helps achieve that light and fluffy texture.

Frequently Asked Questions

Can I use a different frosting for this cake?

Absolutely! While Seven Minute Frosting is a classic choice, you can experiment with cream cheese frosting or a simple buttercream for a richer flavor. Just ensure the frosting complements the lemon filling for a balanced taste.

How do I know when the cake is done baking?

To check if your cake is done, insert a toothpick in the center. If it comes out clean or with a few crumbs attached, the cake is ready. Baking times can vary, so start checking at the lower end of the range to avoid overbaking.

Can I make this cake in advance?

Yes, you can bake the cake layers a day ahead. Allow them to cool completely, then wrap them in plastic wrap and store them at room temperature. Frost the cake just before serving to maintain freshness and prevent sogginess.
