Ingredients

  • 1/2 cup shortening
  • 1 (8 oz) package cream cheese
  • 3 cups sugar
  • 6 whole eggs
  • 3 cups cake flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 oz frozen coconut
  • 1 teaspoon vanilla
  • 1 teaspoon coconut flavor

Instructions

  1. Cream the butter, shortening, and cream cheese together until smooth.
  2. Add the sugar, eggs, flour, baking soda, and salt to the creamed mixture and beat well.
  3. Mix in the vanilla and frozen coconut until evenly incorporated.
  4. Pour the batter into a Bundt pan and bake at 350°F (175°C) for 2 hours.
