Ingredients

  • 2 lb. firm fresh squash
  • 2 small onions
  • 1/4 cup salt
  • 2 cups white sugar
  • 1 teaspoon celery salt

Instructions

  1. Wash and cut the squash into slices.
  2. Peel and cut the onions into quarters, then slice very thin.
  3. Add the squash and onions to a bowl.
  4. Cover with an inch of water and add salt.
  5. Let stand for 2 hours.
  6. Drain thoroughly.
  7. Bring remaining ingredients (sugar, celery salt, turmeric) to boiling in a pot.
  8. Pour the hot mixture over the squash and onions.
  9. Let stand for 2 hours.
  10. Bring all ingredients to boiling point and cook for 5 minutes.
  11. Pack the mixture into preheated jars, leaving 1/8-inch headspace.
  12. Adjust caps and process in a water bath canner at simmer temperature for 15 minutes.
  13. Cool the jars and test seals.
