Ingredients

  • 2 (1 lb.) firm whitefish fillets
  • 1/2 lemon or lime
  • salt
  • 1 large onion
  • 4 garlic cloves
  • 2 Serrano chilies
  • 2 tsp. ground coriander
  • 1 x 1 1/2-inch piece ginger
  • 1/4 c. vegetable oil
  • 2 c. plain yogurt
  • 2 tsp. sugar
  • 1 tsp. salt
  • 2 Tbsp. coarsely chopped raisins

Instructions

  1. Pat fish dry.
  2. Dip lemon in salt and rub over fish.
  3. Let fish stand for 15 minutes.
  4. Mix minced onion, minced chilies, garlic, ground coriander, and minced ginger in a bowl.
  5. Heat vegetable oil in a heavy medium skillet over medium-high heat.
  6. Add onion mixture and stir until golden, about 10 minutes.
  7. Blend plain yogurt, sugar, and 1 teaspoon salt into the yogurt mixture.
  8. Add yogurt mixture to the skillet and cook until thick enough to coat the fish, stirring frequently about 30 minutes.
  9. Preheat oven to 375°F (190°C).
  10. Line a jelly roll pan with foil and set the fish on the prepared pan.
  11. Spread the yogurt mixture over the fish.
  12. Sprinkle with coarsely chopped raisins and almonds.
  13. Bake for 9 minutes for every 1-inch thickness of fish.
  14. Serve immediately.
