Ingredients

  • 3 cups flour, all-purpose
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1 1/2 cups butter
  • 2 large eggs
  • 1 cup brown sugar firmly packed
  • 1/2 cup orange juice
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon zest grated
  • 1 teaspoon vanilla extract
  • 2 cups figs, dried
  • 1 cup dates pitted
  • 1 cup walnuts

Instructions

  1. In food processor or mixer bowl, combine flour, sugar and cornstarch for pastry.
  2. Add butter and process (or mix) until dough holds together.
  3. Divide into thirds.
  4. Roll out two-thirds of dough on a baking sheet to reach all corners evenly.
  5. Prick with fork.
  6. Bake in 350F (180C).
  7. oven for 15 minutes.
  8. Meanwhile, roll out remaining dough between sheets of plastic wrap or waxed paper to a rectangle about half the size of baking sheet.
  9. Cut into long strips about 1/4 inch wide.
  10. Combine eggs, brown sugar, juices, lemon peel and vanilla for filling in processor or mixer bowl.
  11. Blend well.
  12. Process until evenly minced.
  13. Spread filling over baked pastry; top with strips of dough, crisscrossing diagonally.
  14. Return to oven and bake for 30 minutes, until pastry strips are lightly browned.
  15. Cool.
  16. Cut into small bars.
