Ingredients

  • 1 cup tomato juice
  • 2 tablespoons prepared mustard
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon basil crushed
  • 1 teaspoon oregano crushed
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon black pepper
  • 1 (3 lb) beef pot roast

Instructions

  1. Combine all ingredients except the roast in a bowl.
  2. Pour the mixture over the meat and marinate covered in the refrigerator for 24 hours, turning occasionally.
  3. Drain the meat from the marinade.
  4. Reserve the marinade liquid.
  5. Brown the meat in shortening in a Dutch oven or heavy kettle.
  6. Add the marinade and simmer tightly covered for 3 hours or until the meat is tender.
  7. Add a little water if the gravy becomes too thick.
  8. Add carrots, onions, and potatoes during the last 40 to 45 minutes of cooking if desired.
