Ingredients

  • 1/2 cup olive oil
  • 10 cloves garlic, finely chopped
  • 6 to 10 veal, chicken or turkey sausages
  • 3 cans peeled tomatoes, drained, seeded and chopped
  • 1/3 cup dry red wine
  • dash of Tabasco
  • 1 to 2 teaspoons salt

Instructions

  1. Saute garlic in olive oil until soft, about 5 minutes.
  2. Brown sausages in garlic and oil over medium heat, cooking for about 20 minutes.
  3. Add drained, seeded, and coarsely chopped tomatoes, red wine, salt, Tabasco, and basil; simmer for 2 hours until desired thickness.
  4. Stir frequently during simmering.
  5. Serve over spaghetti.
