  2. Lower the heat, cover, and cook the onions for about 25 minutes, stirring occasionally.
  3. Add chicken broth to the pot and bring to a boil.
  4. Chop the zucchini, trimming the ends, and add to the broth.
  5. Return to a boil and cook until the zucchini is tender, about 20 minutes.

  12. Return the blended mixture to the pot and add about 2 more cups of liquid, the cream (if using), and additional liquid as needed.
  13. Season with salt and pepper, then simmer until heated through.

Tips & Substitutions

For added depth of flavor, consider sautéing minced garlic with the onions. If you want a lighter version, you can substitute the heavy cream with Greek yogurt. Fresh herbs like dill or basil can enhance the soup's freshness. Squeeze in some lemon juice just before serving for a zesty finish. Adjust the thickness by varying the amount of reserved liquid added during blending.

Serving Suggestions

Serve the zucchini and watercress soup hot, garnished with a swirl of cream and a sprinkle of fresh watercress leaves for a pop of color. This soup pairs beautifully with crusty bread or a side of Hot Panini Sandwiches for a complete meal. For a heartier option, consider serving it alongside Couscous With Chickpeas And Feta Cheese.

Storage & Reheating

Store leftover soup in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm the soup on the stove over low heat, stirring occasionally to prevent sticking. If the soup thickens too much, add a splash of chicken broth or water to reach your desired consistency, stirring until heated through.

Frequently Asked Questions

Can I use vegetable broth instead of chicken broth?

Yes, using vegetable broth is a great option if you want to keep the dish vegetarian. It will still provide a rich flavor to the soup. Additionally, you can enhance the taste with a splash of soy sauce or miso paste for depth.

How can I make this soup vegan?

To make the soup vegan, substitute the butter with olive oil or a vegan butter alternative, and use coconut cream or a non-dairy cream for a similar creamy texture. Ensure your broth is vegetable-based and omit any dairy products.

What can I do if my soup is too thick?

If your soup ends up too thick, simply add more chicken broth or water gradually until you reach the desired consistency. Stir well to incorporate the added liquid, and heat through before serving. Adjust the seasoning afterward if needed.
