Zucchini-Avocado Saute
Ingredients
- 14 cup butter or 14 cup margarine ⓘ
- 12 lb mushroom, sliced ⓘ
- 3 zucchini, thinly sliced (4 cups) ⓘ
- 1 green pepper, sliced ⓘ
- 2 avocados, peeled,pitted and sliced ⓘ
- 12 lb swiss cheese, grated ⓘ
- 1 tablespoon chili powder ⓘ
- sour cream (optional) ⓘ
- chives (optional) ⓘ
- chopped chili pepper, garnish (optional) ⓘ
Instructions
- Melt butter or margarine in large skillet over medium-high heat.
- Add mushrooms and cook 5 minutes or until soft.
- Remove from skillet and set aside.
- Add zucchini and green pepper to skillet and cook 10 minutes.
- Remove from heat and put in serving dish.
- Add avocado and mushrooms to zucchini mixture and sprinkle with cheese and chili powder.
- Stir to combine all ingredients.
- Garnish with sour cream, chives and/or chopped chili peppers.
