Ingredients

  • 4 cups zucchini, grated
  • 1/2 medium onion, minced
  • 4 eggs, beaten
  • 1.5 cups shredded Cheddar cheese
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Place grated zucchini and minced onion in a 10 x 6 x 2-inch dish.
  2. Cover with plastic wrap, turning one edge back slightly to vent.
  3. Microwave on High for 10 minutes.
  4. Drain the zucchini and onion mixture.
  5. In a large bowl, mix together beaten eggs, shredded Cheddar cheese, salt, and pepper.
  6. Add the drained zucchini and onion mixture, stirring well.
  7. Grease the dish in which the vegetables were cooked.
  8. Pour the egg and cheese mixture into the dish and cover with plastic wrap.
  9. Microwave on High for 6 to 8 minutes until the center is set.
  10. Rotate the dish 1/2 turn after 6 minutes.
