Zucchini Banana Bread

Ingredients

  • 1 1/2 c. grated zucchini
  • 1 1/4 c. white sugar
  • 2/3 c. mashed ripe bananas
  • 1 c. brown sugar
  • 3 eggs
  • 1 1/4 c. cooking oil
  • 2 tsp. vanilla
  • 4 c. flour
  • 1 1/4 tsp. soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt

Instructions

  1. In a large bowl mix zucchini, sugar, mashed banana and brown sugar.
  2. Let stand.
  3. In another bowl, beat eggs, oil and vanilla. Combine with first mixture and mix well.
  4. Then add dry ingredients.
  5. Stir until well mixed.
  6. Bake in two large loaf pans for 50 minutes at 325°.
