Ingredients

  • 1 lb. ground beef
  • 4 celery stalks, chopped
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 2 cans (28 oz.) tomatoes, undrained
  • 6 medium zucchini, cubed
  • 4 cups water
  • 3 tsp. Italian seasoning
  • 2 tsp. salt
  • 2 tsp. beef bouillon granules
  • 1 tsp. sugar
  • pepper to taste

Instructions

  1. In a large pan, cook ground beef, chopped celery, onion, and green pepper over medium heat until the meat is no longer pink.
  2. Drain excess grease if necessary.
  3. Stir in tomatoes, cubed zucchini, water, Italian seasoning, salt, beef bouillon granules, and sugar.
  4. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes.
  5. Garnish with Parmesan cheese if desired before serving.
