Zucchini Bread(For 2 Loaves)

Ingredients

  • 4 c. shredded zucchini
  • 3 c. flour
  • 2 1/2 c. sugar
  • 1 1/4 c. oil
  • 4 eggs, beaten
  • 1 Tbsp. + 1 tsp. vanilla
  • 1 Tbsp. cinnamon
  • 1 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 c. nuts (optional)

Instructions

  1. Mix all together; pour into 2 loaf pans sprayed with nonstick spray.
  2. Bake at 350° for 50 to 60 minutes.
  3. Also makes great cupcakes and just need to bake about 25 minutes.
