Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons flour (for dusting pans)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 6 egg whites or 3/4 cup egg substitute
  • 1 1/2 cups sugar
  • 3/4 cup vegetable oil
  • 1 1/2 teaspoons vanilla
  • 2 cups grated zucchini
  • 1 cup raisins

Instructions

  1. Mix together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
  2. In a separate bowl, beat egg whites or egg substitute with sugar, oil, and vanilla.
  3. Stir in grated zucchini and raisins.
  4. By hand, stir in the flour mixture just until blended.
  5. Spray two 4x8-inch loaf pans with vegetable cooking spray and dust with 2 teaspoons flour.
  6. Divide the batter evenly into the prepared pans.
  7. Bake at 350°F (175°C) for 50 to 60 minutes.
