Zucchini Breakfast Bake

Ingredients

  • 4 eggs
  • 3 cups diced zucchini
  • 1 onion, chopped
  • 1 cup pancake mix
  • 12 cup canola oil
  • 12 cup grated parmesan cheese
  • 12 teaspoon italian seasoning
  • 1 pinch pepper

Instructions

  1. Preheat oven to 350.
  2. Beat eggs until smooth.
  3. Stir in zucchini, onion, pancake mix, oil, cheese, seasoning and pepper.
  4. Spread mixture into a 6X10 inch pan prepared with cooking spray.
  5. Bake for 30 minutes or until golden brown.
