Ingredients

  • 6 medium zucchini
  • 1 cup cottage cheese
  • 1 cup shredded Jack cheese
  • 2 beaten eggs
  • 1 teaspoon dill weed
  • 1 teaspoon salt
  • 1/2 cup bread crumbs
  • 1 tablespoon butter

Instructions

  1. Cut zucchini into chunks or slices and steam until slightly tender but not mushy.
  2. Place the steamed zucchini in a greased shallow, 1 1/2-quart casserole dish.
  3. Mix cottage cheese with Jack cheese, beaten eggs, salt, and dill, then spread over the zucchini.
  4. Sprinkle bread crumbs over the top and dot with butter.
  5. Bake uncovered at 350°F for 30 minutes until golden and bubbly.
