Ingredients

  • 1 cup margarine (2 sticks), softened
  • 2 cups sugar
  • 3 eggs
  • 2 cups grated zucchini
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 cup mini chocolate chips
  • 1 cup chopped walnuts (optional)

Instructions

  1. Cream together the margarine and sugar.
  2. Add eggs and beat well.
  3. Add grated zucchini and vanilla, mixing to combine.
  4. Mix in dry ingredients: flour, baking soda, baking powder, salt, and cinnamon.
  5. Fold in mini chocolate chips and chopped walnuts (if using).
  6. Pour batter into greased and floured loaf pans (2).
  7. Bake at 350°F for 45 minutes to 1 hour, until a toothpick inserted in the center comes out clean.
  8. Allow to cool, then top with confectioners' sugar before serving.
