Ingredients

  • 10 c. ground zucchini
  • 4 c. ground onions
  • 2 green bell peppers
  • 5 Tbsp. salt
  • 1 qt. vinegar
  • 7 c. sugar
  • 1 tsp. nutmeg
  • 1 tsp. turmeric
  • 1 tsp. dry mustard
  • 1 tsp. cornstarch
  • 2 tsp. celery seed

Instructions

  1. Combine ground zucchini, ground onions, and chopped green bell peppers in a bowl and let set overnight, covered.
  2. Use a food processor to chop the vegetables.
  3. The next morning, rinse the mixture well with cold water and drain thoroughly in a nylon net, pressing firmly to remove excess water.
  4. After draining, combine vinegar, sugar, nutmeg, turmeric, dry mustard, cornstarch, and celery seed in a pan.
  5. Bring the mixture to a boil and then simmer for 30 minutes.
  6. Pour the hot mixture into prepared jars and seal.
