Zucchini Con Carne
Ingredients
- 1-1/2 pounds beef stew meat, cut into 1-inch cubes ⓘ
- 1/4 cup all-purpose flour ⓘ
- 2 tablespoons vegetable oil ⓘ
- 1-1/2 cups water ⓘ
- 2 garlic cloves, minced ⓘ
- 1 teaspoon salt ⓘ
- 1/2 teaspoon pepper ⓘ
- 4 large zucchini, cut into chunks ⓘ
- 2 cups whole kernel corn ⓘ
- 1 medium onion, cut into wedges
- 2 cans (4 ounces each) chopped green chilies, undrained ⓘ
- Shredded Monterey Jack cheese ⓘ
- Warmed flour tortillas, optional ⓘ
Instructions
- Toss beef with flour until coated. In a Dutch oven over medium heat, brown beef in oil.
- Add water, garlic, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 1 hour and 15 minutes or until the meat is tender. Add zucchini, corn, onion and chilies; bring to a boil.
- Reduce heat; cover and simmer for 20-30 minutes or until the vegetables are tender. Sprinkle with cheese and serve with tortillas if desired.
