- Wash zucchini and peel if desired, then chop into small pieces.
- Dice the onion.
- Saute the onion in oil until lightly browned.
- Add chopped zucchini and spices (salt, pepper, cumin) to the pan.
- Cover and cook without adding water for 10-15 minutes until zucchini is tender.
- Lightly mash the zucchini with a fork or masher if desired.
- Add tomato paste and cracked wheat to the pan.
- Cook until the wheat is tender, stirring occasionally.
- Serve after approximately 45-50 minutes, as a side dish.
