Zucchini Cooked With Wheat

Ingredients

  • 1-2 medium or large zucchini
  • 2-3 tablespoons oil
  • 1 onion
  • Salt
  • Pepper

Instructions

  1. Wash zucchini and peel if desired, then chop into small pieces.
  2. Dice the onion.
  3. Saute the onion in oil until lightly browned.
  4. Add chopped zucchini and spices (salt, pepper, cumin) to the pan.
  5. Cover and cook without adding water for 10-15 minutes until zucchini is tender.
  6. Lightly mash the zucchini with a fork or masher if desired.
  7. Add tomato paste and cracked wheat to the pan.
  8. Cook until the wheat is tender, stirring occasionally.
  9. Serve after approximately 45-50 minutes, as a side dish.
