Zucchini Date Cake

Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 2 teaspoons vanilla
  • 2 cups shredded zucchini
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups flour
  • 3/4 cup chopped dates
  • 1 1/2 cups nuts

Instructions

  1. Mix eggs, sugar, oil and vanilla.
  2. Beat until smooth.
  3. Add zucchini.
  4. Stir in dry ingredients.
  5. Add dates and nuts.
  6. Pour into a 9x13 greased and floured pan.
  7. Bake at 325 degrees for 45 minutes to one hour.
