Ingredients

  • 1 stick oleo
  • 3 cups diced zucchini, peeled
  • dash minced onion
  • 1 box Stove Top stuffing (chicken flavor)
  • 1 can cream of chicken soup
  • 1 small carton sour cream

Instructions

  1. Fry the diced zucchini with a dash of minced onion in a small amount of fat until tender.
  2. Melt the oleo in a casserole dish.
  3. Add the cooked zucchini and minced onion on top of the melted oleo.
  4. Mix the Stove Top stuffing according to the directions on the box, omitting the oleo.
  5. Spread the prepared stuffing over the zucchini layer.
  6. Mix the undiluted cream of chicken soup and sour cream together and pour over the stuffing layer.
  7. Bake at 350°F for 40 minutes until hot and bubbly.
