A sweet and tangy zucchini freezer jam with strawberry and pineapple flavors, perfect for summer preserves or spreads on toast and biscuits.

Ingredients

  • 6 c. shredded zucchini
  • 1 large box strawberry Jell-O
  • 1 (20 oz.) can crushed pineapple, drained
  • 2 Tbsp. lemon juice

Instructions

  1. Cook shredded zucchini for 6 minutes.
  2. Add strawberry Jell-O, drained crushed pineapple, and lemon juice to the cooked zucchini.
  3. Bring the mixture to a boil and cook for 6 minutes.
  4. Pour the hot jam into half pint or pint jars.
  5. Seal the jars and turn them upside down to cool.
  6. Let the jars stand for 24 hours.
  7. Freeze the jars to store.
