Ingredients

  • olive oil cooking spray
  • 4 medium-sized zucchini
  • salt
  • 1/4 tsp. freshly ground black pepper
  • 1 Tbsp. chopped fresh thyme leaves or 1 tsp. dried oregano, marjoram or basil
  • 2 Tbsp. extra virgin olive oil

Instructions

  1. Preheat oven to 350°F.
  2. Lightly spray the bottom and sides of a round, ovenproof baking dish approximately 9 inches wide and 1 inch deep.
  3. Trim the ends of 4 medium-sized zucchinis and cut into 1/4-inch thick slices.
  4. In a bowl, toss zucchini slices with salt, black pepper, chopped fresh thyme leaves or dried herbs, and extra virgin olive oil.
  5. Arrange the seasoned zucchini slices in the prepared baking dish in an even layer.
  6. Bake in the preheated oven for about 30 minutes until tender and golden on top.
