- Lightly spray the bottom and sides of a round, ovenproof baking dish approximately 9 inches wide and 1 inch deep.
- Trim the ends of 4 medium-sized zucchinis and cut into 1/4-inch thick slices.
- In a bowl, toss zucchini slices with salt, black pepper, chopped fresh thyme leaves or dried herbs, and extra virgin olive oil.
- Arrange the seasoned zucchini slices in the prepared baking dish in an even layer.
- Bake in the preheated oven for about 30 minutes until tender and golden on top.
