Ingredients

  • 2 medium zucchini
  • 4 to 5 green or red peppers
  • 3 bay leaves
  • salt
  • pepper
  • garlic salt
  • 4 to 5 medium potatoes

Instructions

  1. Peel the zucchini, peppers, potatoes, and onion, then slice all vegetables and place them in a large baking pan.
  2. Add tomatoes, bay leaves, salt, pepper, and garlic salt to the vegetables.
  3. Mix everything well to combine the flavors.
  4. Sprinkle with olive oil and cover the pan.
  5. Bake at 400°F (200°C) for about 30 minutes.
  6. Uncover and bake an additional 30 to 40 minutes until vegetables are tender and cooked through.
