Zucchini Onion Pie

Ingredients

  • 3 eggs
  • 1 cup parmesan cheese, grated
  • 1/2 cup canola oil
  • 1 tablespoon fresh parsley, minced
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 cups zucchini, sliced
  • 1 cup baking mix, bisquick
  • 1 small onion, chopped

Instructions

  1. In large bowl whisk together first seven ingredients.
  2. Stir in zucchini and baking mix.
  3. Pour into greased 9" deep dish pie plate.
  4. Bake at 350 for 25-30 minutes or until lightly browned.
