- Put zucchini, vinegar, sugar, and 1/2 teaspoon salt in a bowl lined with a double thickness of cheesecloth.
- Toss gently to combine.
- Cover and set aside for 1 hour.
- After 1 hour, gather ends of cheesecloth and squeeze to drain as much liquid as possible.
