Ingredients

  • 2 medium zucchini, coarsely grated
  • 1 teaspoon tarragon vinegar or white wine vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 cup fresh parsley, chopped fine after measuring
  • 1/4 cup finely chopped chives
  • 1 (3 oz.) package cream cheese, softened
  • 1/4 teaspoon pepper

Instructions

  1. Put zucchini, vinegar, sugar, and 1/2 teaspoon salt in a bowl lined with a double thickness of cheesecloth.
  2. Toss gently to combine.
  3. Cover and set aside for 1 hour.
  4. After 1 hour, gather ends of cheesecloth and squeeze to drain as much liquid as possible.
